GLASS NOODLE CHICKEN SOUP



Soups,is it the winter that sets stage for a hearty soup (hot chocolate is more like it),no we have summer soups too but i think a soup is a nutrious ,healthy & filling platefull all at once.And there is so so much u can play around with souP-- easy peasy put by in a jiffy & u soon have a healthy wholesome 'snack' at hand.








Atlast finding a packet of glass noddles ,i learnt that they are bean threads & they got absolutely transparent when i dipped 'em in boiling water,they arent called glass noodles or cellophane noodles for nothing or crystal noddles.








My addition of it today is for a yummy ,absolutely healthy clear chicken & broccoli soup.OH would have loved to tip in mushrooms but there werent any and the other thing i saw ------on travel & living for the pho to get a clear stock is they change the water thrice while on the fire,oh i tried it for the chicken here as well,clear as ever was the stock but i did have to add some stock powder later.




This is a delicious & absolutely healthy hearty soup that'll have everyone asking for more.
1 pound chicken(around 450 grams)
a few cloves crushed garlic
3 bay leaves
7 rubbed cloves
1 onion sliced FINELY
peppers/mushrooms/broccoli/
peas/beans /fresh herbs as per taste












1.if u wanna do the 3 water change method for an absolutely clear stock ,then add all the seasonings(not veggies)after the final water change else add all together with ennough water & spoon out any scum floating atop.










2.After the chicken is done ,add veggies according to the time they'll take to cook. I added the beans first & broccoli & peppers just before taking off the flame.They'll retain their color & crunchiness too.I did add a wee bit of stock powder alongwith salt.







3.Shred the chicken or u could serve whole peices too.Serve with broth topped with a little extra virgin portuguese oil(optional) & bean threads(glass noodles)& olives. I think finely chopped green onions & chives would make a great garnish here.










For my serving i really dont mind an extra large sprinkle of extra virgin olive oil.
