I HEART CUPPYCAKES-RICH CHOCOLATE CUPPY FILLED W PB CREAM CHEESE FILLING TOPPED WITH CREAMY WHITE GANACHE



SNOWY WHITE TOPPED CHOCOLATE CHIP SUPRISE CUPCAKE WITH PEANUT BUTTER FILLING & LUSCIOUS WHITE GANANCHE or MAYBE I SHOULD CALL THESE FUDGY BROWNIE KIND CUPPY WITH A PEANUT BUTTER FILLING OR BETTER STILL HOW ABOUT RICHIE RICH PEANUT BUTTER BROWNIE CUPCAKES.Oh i cant decide

dark /milk choco cupcakes with white choco-chips& white chocolate ganache
Having never worked with peanut butter in a cuppy cake before ,little did i know that chocolate cuppys with peanut butter are a classic...
i can already taste the flavours developing,chocolate cupcakes witha good addition of white choco chips(callets here) for the 'suprise' part ,filled in with a piping bag with a delicious peanut butter filling(also a first) frosted with a white chocolate ganache(contributing to the 'snowy' tittle) & dark chocolate flowers.
Nutella would team by well too but i so do wanna create with my callebaut callets.
The reason for the white chocolate ganache(i dont know if am right) is the alternate coloring,a good mingling for contrast of the chocolaty brown & white chocolate...http://chockylit.blogspot.com/2006/02/peanut-butter-filled-chocolate.html
I'm always fascinated by cuppy & imagine my reaction when i tumbled in I HEART CUPPYCAKES & READ ABOUT CUPCAKE HEROboy wasnt i thrilled,what a lovely tumble that was & the excitement building up even as am writing this(yup just half an hour back i joined in the gang and am already halfway thru my post)am so so excited.....

Cuppys & fairy cakes,the love for which has been growing since their conception in my heart a few months ago &
that too with just one tray tin...oh my wishlist for all tools et all to assist in making cuppys grows on longer & longer...
love those cute silicone fluted cups &
 oh am like a bee to honey for all those thick varied brightly hue'd paper cups but they elude me since.
And all those pans i see online(sugarcrafts,amazonz ,wiltons)have me weak in my knees & add to my ever growing wish list...multi cavity pans,dolls& balls & teddy bears & hearts,mutli textures & multi cavity & 3d cuppy cake tins,mini bears & mini 3d bears,they all keep adding....and u know u actually have these cute heart shaped muffin tins with a removable base...woaaa.& all those piping bags & decorating kits .....oh it just gets more exciting by the moment.
HAving just bought quite a bit of coverture white & dark chocolate callets & also origin chocolate & with a hamilton beach on its way,my wishlist in cuppys will take awhile but that doesnt stop me having fun ,it doesnt & the party goes on.
And though in my heart i do know these will be lovely i going to make just 12,enough for our afternoon tea when everybodys home :-)))
and they sure are a super rich treat,will go excellent with a good expresso or hot vanilla milk.
And then i read something else-this challenge has a winner with a booty for the prize.THESE PRIZES SPONSERED BY THESE FAB SPONSERERS couldn get ant better.They are so so so dang cute that i actually wanna cry thinking of how much of a chance i would have in this amazing world of beautiful bakers of gorgeuos creations but my hearts in this coz I HEART CUPPY CAKES TOO---& VERY V V V MUCH
This choco cuppy cakkey with the white choco chips is somewhere u just cant go wrong at all ,oh as i bite in to the white chippys ,a sweetness so creamy hits me..oh am loving it already when my bite and taste buds reach the luscious peanut butter & cream cheese filling---oh cant go wrong with philly cheese either can i? Its deliciousness & creaminess is heightenned with the addition pf peanut butter & the white chocolate ganache is another fantasy...i love this little mighty package---packs in a goody punch & how....well read ahead to make this one urself....u'll love it ,u just have to....

I made these on friday night and was adding a few lines to the post ,that had to run to the warm oven a few times for a decadent rich bite.they are gorgeous & am happy for the addition of a little milk chocolate(it really does something to that dark chocky flavour that i cant describe---wowowowow)& its like am biting into a nice real rich chocolate fudgy dessert cuppy cake.

Now i love chocolate really really sweet(sugar high=yes)and i found i cup sugar was a wee bit on the sweeter side ,considering what i love,maybe otherwise i would cut down on the sugar to say half or 3/4 & add a tsp of instant expresso.






oh what have the joys of spring brought in....
something that'll make everybody so keen!!!
Not only for today's high tea....
where bdw we r serving expresso coffee!!!
But a delight that'll be looked foward to often...
oh thats the cuppy cake fever growing...
in a good way






FOR THE CHOCO-CHIP SUPRISE CUPCAKES
100 GRAMS DARK CHOCOLATE & MILK CHOCOLATE MIXED(i mixed 70-30 of 70% callebaut chocolate & callebaut milk arriba chocolate)
11TBH(156 grams) BUTTER(i used salted)
1 cup SUGAR
3 EGGS
1/2 CUP + 1TBH self raising FLOUR
2TBH COCO POWDER(i used hersheys coz im more of a milk choco cuppy cake lover ,if u like it dark ,dutch processed is an excellent option)
1 CUP WHITE CHOCO callets/buttons/chips

1. Melt the gorgeous dark chocolate with butter over a water bath/ double boiler for a great creamy rich mix.
2. Tip in all the sugar,give it a good stir & let the mixture cool for a short time.
3. Beat well till smooth & creamy(by hand a good 7 mins)& add an egg at a time beating well between each addition.
4. Add flour sifted with baking powder,coco powder & milk chocolate,white chocochips & mix till blended.
5. Fill cupcakes cups 3/4 & bake in a pre-heated oven at 190*c for----mins till toothpick inserted comes clean.
i got 9 bigger cuppy's,6 smaller cuppys & 2 biggg 'muffins' with this batter
OH,THERE ARE NUTS & THERE ARE NUTS,
AND ALONG SIDE 'BUTTERY' CUTS.
WHICH IS UR ALL TIME FAV ONE,
THE '1' THATS MAKE UR SMILE BROADLY RUN??
OH PEANUTS ,MONKEYNUTS OR WHAT HAVE U,
IS SURELY AN ALL TIME FAV of maNY a few!!!
THE LIST OF FAVS IS LONG,
BUT LETS GET IT RIGHT ON THIS ONE...
JELLY BLOBS ON THIS BUTTERY SPREAD,
MAKE FOR A DELICIOUS SANDWHICHED WHITE BREAD!!
OR TO BE SPREAD WITH NUTELLA,
FOR A CUPPY CAKE ALA ALA!!
OH WE LOVE PEANUT BUTTER ALL THE WAY,
LETS DO IT JUSTICE IN THIS MONTHS-CUPPY CAKE FRAY!!!


FOR THE PEANUT BUTTER CREAM CHEESE FILLING
2ounces or 1/4 package of Philly cream cheese
1/2cup creamy peanut butter
1 cup sifted powdered sugar
1 tablespoon vanilla extract
2 tablespoons milk

1.Beat cream cheese & peanut butter till well combined.
2.continue beating while adding powdered sugar & vanilla & beat till well combined.
3.add milk to a creamy smooth mixture.


FILL A PIPING BAG WITH A MEDIUM TIP & FILL THIS FILLING.
INSERT INTO CUPCAKE & SQUEEZE IN THE FILLING TILL U FEEL IT EXPAND SLIGHTLY.

UPDATE-WAS MAKING FILLED CUPPY FOR THE FIRST TIME & I DIDN FEEL 'EM EXPANDING LIKE I EXPECTED AND WAS A LITTLE DISSAPOINTED....
 



WHITE CHOCOLATE GANACHE
4.5ounces(128 grams) white chocolate
1/2CUP heavy cream
1TSP vanilla
1 tbh butter
1 cup powdered sugar


1.HEat cream till it bubbles & pour over chopped chocolate ,in a heat proof mixing bowl.
2.Stir till combined after letting it sit for a min
3.Add vanilla & butter and combine.
4.Let it cool for awhile,add sugar and beat well till lighter in color & creamy(if u have a stand mixer the mixer will do all the beating for u).


GO RIGHT AHEAD & HAVE FUN TOPPING TO DECORATE UR FILLED CUPPY CAKEYS WITH THIS LUSCIOUS & CREAMY GANACHE.

UPDATE-THE GANACHE WASNT LIKE I THOUGHT IT TO BE AND THEN I READ THAT WHITE CHOCOLATE DOESNT WORK----
update- the fridge worked as my best friend here-a few hours of setting,whipping,setting gave me some desired results but doesnt stay outa the fridge without a melt down too long-is it our warm humidity ,the wrong chocolate or just me wrong???

BUT MOM KNOWS BEST TO MAKE MY DAY..
AND CHOOSES ME AN ARRAY,
OF CUPPY'S IN DIFFERENT HUES....
AS DAINTLY AS I CAN I 'GOBBLE' A FEW,
PACKING THE REST FOR A LATER TIME.
OH MOM & ME FLOAT OUT TOGETHER...
WITH A TUMMY FULL & SUGARY TOOTH ,
I'M HAPPY & GAY...

  2. Thanks for your lovely comment. Your cuppycakes look so very decadent and rich. I love the cuppycake "song". I also find that white choc ganache is very temperamental when I try it, I sometimes add double the chocolate to get it to set!
