RED PEPPERED CHICKEN SOUP with A ZUCHINNI GREEN PEA GARNISH

Clear soup is a makes for a delicious yet healthy late evening snack & we usually have a round of soups way before dinner.
Plus its perfect for the Summery months where eating lite is one of the best way thru the heat and humidity.
Ofcourse we love rich soups too but i love working my way towards healthy options at the most with a drizzle of portuguese extra virgin olive oil while serving.

This is an absolutely delicious ,quick to put by chicken soup with red peppers & a zucchinni green pea garnish. Tried a smoked zuchinni & red pepper garnish too & loved the sweet smoky flavours that develop.
Now all u do is place all the ingredients in a pressure cooker,easy peasy,thats so easydid have one change of water before i sealed it though,read here for more on it and when its done add the red peppers & frozen green peas saving some for garnish. would have loved to add sliced mushrooms & a sprig of parsely here.....and mushrooms ,panner or tofu,broccoli will fit like a glove for a veggie version of this soup.
I loved the flavour ginger lends to this clear soup & an addition of glass noodles or drop egg would be lovely too but i didn wanna repeat this quick.
U can sure flavour this one with garlic too and cinnamon or any sweet spice in place of cloves but i simply love this combination
Chicken Thigh on Foodista
1 pound of chicken(i used one thigh & few bony pieces but a breast fillet would be great too)
a nice piece of ginger crushed
1-2 onions finely chopped
a few cloves
salt to taste(or a little stock powder)
pepper(as per taste-i didn use this)
1. Place all of the above with enough water and pressure cook for 2 whistles.
2. Red peppers-sliced or cubed
Zuchinni- sliced to garnish
Frozen or boiled peas as per taste

3. Add the green peas finally  if frozen as they are done in a jiffy.
4. serve hot clear soup garnished with shredded chicken,zuchinni,green peas & red peppers.
DIDn add even a tsp of oil ,its all from the chicken only but would taste great with a dash of extra virgin surely.

GLASS NOODLE CHICKEN SOUP



Soups,is it the winter that sets stage for a hearty soup (hot chocolate is more like it),no we have summer soups too but i think a soup is a nutrious ,healthy & filling platefull all at once.And there is so so much u can play around with souP-- easy peasy put by in a jiffy & u soon have a healthy wholesome 'snack' at hand.








Atlast finding a packet of glass noddles ,i learnt that they are bean threads & they got absolutely transparent when i dipped 'em in boiling water,they arent called glass noodles or cellophane noodles for nothing or crystal noddles.








My addition of it today is for a yummy ,absolutely healthy clear chicken & broccoli soup.OH would have loved to tip in mushrooms but there werent any and the other thing i saw ------on travel & living for the pho to get a clear stock is they change the water thrice while on the fire,oh i tried it for the chicken here as well,clear as ever was the stock but i did have to add some stock powder later.




This is a delicious & absolutely healthy hearty soup that'll have everyone asking for more.
1 pound chicken(around 450 grams)
a few cloves crushed garlic
3 bay leaves
7 rubbed cloves
1 onion sliced FINELY
peppers/mushrooms/broccoli/
peas/beans /fresh herbs as per taste












1.if u wanna do the 3 water change method for an absolutely clear stock ,then add all the seasonings(not veggies)after the final water change else add all together with ennough water & spoon out any scum floating atop.










2.After the chicken is done ,add veggies according to the time they'll take to cook. I added the beans first & broccoli & peppers just before taking off the flame.They'll retain their color & crunchiness too.I did add a wee bit of stock powder alongwith salt.







3.Shred the chicken or u could serve whole peices too.Serve with broth topped with a little extra virgin portuguese oil(optional) & bean threads(glass noodles)& olives. I think finely chopped green onions & chives would make a great garnish here.










For my serving i really dont mind an extra large sprinkle of extra virgin olive oil.

A VEG A DAY-BEANS AND POTATOES WITH A HEALTHY QUOTIENT



Beans are loved by us all,and as far as possible we do try to fix the our daily dose of the cooked veg w/o oil & if using oil,a tsp at the most,of olive oil.

Ok coconut aint the healthiest thing but at least some brownie points on one count .ie,no oil,yet this one is healthier than many a daily veg dish..Have a couple of takes on this,like i splutter mustard seeds & then roast the onion,garlic ,coconut/coconut juice & then add beans(will post that too,till then wont this do)This is a quick one pan method,all u need is to chop,Place in the pan,ignite the gas top & stir a few times while checking on seasoning.
I came across thiswonderfull blog with a better event and i was full on for this one.
I wanted to bring in all my yellow(read-turmeric) hued delicacies along.
And i was introduced to this blog all thanx to





BEANS WITH BAKED JACKET POTATO

3 medium sized bunches of long beans

2 medium onions

3 tbh coconut grated with a tbh of garlic(food processor)

a small piece of jaggery/sugar
a tsp turmeric powder
1/2 tsp lime juice

salt to taste

METHOD

1. Chop onions finely,add to the pan with grated coconut & garlic. Chop beans as u like,add that too with the rest of the ingredients & a tbh of water.

2. Place pan on fire & cook on high,covered for 3 mins,this releases water & ensures it cooks in its own steam. Stir well.Cook again till done.Check seasoning.

3. OPTIONAL- add a cubed baked potato to this towards the end,i did,a lovely addition
  

 I sure could do with a garnish of cilantro or capsicum but then we had a green salas with loads of cilanro so skipped it here.
Goes really well with steamed rice,a curry,salad & fried fish.
The beans i used are a local variety called 'vaal',long gg beans,dont know if they string beans or what but will check on this one.
