CHICKEN & ALMOND SALAD-NIGELLA @ IHCC





Salads-i love 'em -and a hearty salad is more than welcome-besides if u have all the ingredients at hand or in ur pantry,in a jiffy u have a hearty dinner(ok ok ,i dig out some leftovers too-we are a eating family yeah)!!!!
IHCC-i heart cooking clubs iS ur new-a gorgeously elcious way to introduce NIgella Lawson into ur breakfast,lunch & dinner-wish i could introduce all her line of kitchen tools & goodies too-

(come'on girl there's time for that ok-me telling myself-u as a student got so muc more than.....than what i know not...:-)))) )
Ok Ok,where were we ???salads? no no
nigella???
no no....We were at Nigella=good foods=hearty salad for now......

AND THIS IS FOR THIS WEEKS EXCITING POTLUCK....
Ok for my first Nigella salad(yeah sure,many more to come-stay tuned )i chose the CHICKEN,ALMOND & PARSELY SALAD



Ok had to tweak it yes,only coz have never seen flat leaf parsely around -oh we love the parsely that we have so there went...AND dont tell me flat leaf parsely is actually celery???????

LETS BEGIN WITH THE COOKED CHICKEN


Cooked chicken is any cooked chicken breast so here's an account of what i did........


i had a pieces of the chicken skewer strips(uncooked-marinated-recipe later coz i couldn click pics last time round)of a super marinade that has golden syrup et all.


Cut it up a bit,pricked all over,some fresh lemon juice in around 100ml of cream & i was done...


No wait....some grilled potato in this salad would be fantastic so srcubbed ,pierced all over and microwaved 2 potatoes till ala dente(remember i said we grill it later),cubed it largely & added to the creamy chicken marinade.


There it sat in the refrigeration,until dinner time.....


GRILLED TILL DONE WITH THE MARINADE(ITS LOVELY AND CREAMY),AND TOSSED WITH THE STALKS OF THE PARSELY AM USING,V FINELY CUT.



ICEBERG SETTING STAGE HERE ALONG W ZUCHINNI,OLIVES,RED PEPPER,PINK LETTUCE,PARSELY & FLAKED ALMONDS...A GLIMPSE OF WHATS TO COME....


WHAT GOES IN....


well besides adding the parsely & almonds-the recipe screams that yeah-i did dig into our veggie tray to see what i come up with-what is it that u cant jud STICK TO RECIPES gurl i tell myself(yeah i tell myself lotta things often but now i share 'em with u too).other thing is where quantity is concerned ,i let my senses take over,my sense of smell,sight & v imp TASTE(now u know why i'm barely eating at dinner,dont u mom!!!!)
So we had some  RED peppers that added loads of color...



and loads of portuguese black olives,crunchy iceberg,pink lettuce....


and yeah loads of small leaf parsely....



and a mellowy buttery yellow zuchinni cubed...




and some more iceberg and olives....




and loads of lightly roasted flaked almonds with a nutty crunch.....



and celery that does resemble,atleast a wee bit?, flat leaved parsely (or is it the smae???) w some sliced cherry toms,light in color but deep in flav-sweet to the core......

HERE'S THE ORIGINAL RECIPE FROM NIGELLA'S SITE FOR 1 PORTION(easily doubled ,tripled...&so on...)
ADAPTED FROM NIGELLA LAWSON







1 cold cooked chicken breast, sliced and shredded
couple of handfuls fresh flat-leaf parsley
1 tablespoon or so extra virgin olive oil
juice of half a lemon
Maldon salt (i used local sea salt-i live by the sea u see)
50g or so(i love the 'or so' there-am on familiar ground aint i?) flaked almonds, toasted




Using your hands, mix the chicken and parsley together in a large bowl or on a large plate. Dribble over the olive oil and, still using your hands, toss to mix. Now squeeze over the lemon juice, sprinkle over the salt and tip in most of the toasted almonds and toss again. Sprinkle over the remaining almonds, and your work here on earth is done.

(i dont want my work on earth done,i'm baking cookies remember and i need to gorge on the salad yeah!!!)

I imagine Nigella ,tossing all the ingredients in her super cute -i want 'em all kinda feeling evoking -line of kitchen goodies,salad bowl with the salad mixing spoons.......maybe if i lived in bombay the availibity of stuff would have been so vast & so would be' my crossing the limit of my family credit card(which i get to use-it even has my name on it-but it ends there)




THE ABOVE IS ABSOLUTELY TANGY LIME/LEMON ,THATS LOCALLY AVAILABLE AND FOUND IN MANY A KITCHEN GARDENS AND W A FEW LOCAL TRADERS,AS WE CALL 'EM  "LIMAO'S DE GOA"

 
I hope i didn tweak it too much but we all loved,enjoyed a hearty meal this nite ,but no i wont be repeating it soon-coz i have to cook New Nigella's recipes every week so i can tell u all about 'em at IHCC





The IHCC is sounding more like NIGELLA FEASTS to me-yeah thats exactly we'll all have in the days to come ,so do hop by for a feast every week to............ & join in the fun!!!!!!
