THUMBALINA GOES COOKIE-choco&jam filled thumbprint cookie



Thumbs in cookie i call em coz my well scrubbed thumbilina,made all doz indents to fill in the gorgeous fillings,sometimes twice and thrice over(=more filling)
Its been awhile i find myself gazing at those trillion thumbalina's on the net. . .






And now the moods just rite to get these done. . . .oh i wanna try em all i bookmarked n carry em jammy delites in my tiffin,and experiment with all those ideas popping in my Holiday mood filled heart. .ok more like bursting or overflowing right. . . . . .






I filled some wit mango jam n a strawberry candy,simply coz we didn have any red r green filling at home,the jam gets elicious when baked in. . .a few wit a vanilla bean&honey choco ganache. . .gorgeously creamy & finger lickin good....






Would have loved some gold sprinkling dust n red n white snow sprinkles on em bt i had none. . . .
And will definately nid to bake loads more cookies to make it to my hampers. . . . 




This  is an absolutely delightful crunchy buttery cookie with the centres heightening the whole cookie eating pleasure's..... 






Ahh and before u begin Dont forget to set ur ipod with the tiny travelling speakers to all ur fav Christmas carols playlists as i do with every bake or brew in the kitchen (mine sure do travel the whole home).
Infact i'm still naming my corner on the washing machine that i park all my frens ie my laptop(far away from the counter=no spills,yet in the kitchen) & the ipod with my travelling speakers & as i jiggle to the jingle of the Christmas bells i begin whisking away so let me begin by telling ya what goes in...






THUMBALINA COOKIES

24tablespoons(3 sticks)salted butter,room temperature
1 cup sugar
1 large egg
3 1/4 cups all-purpose flour (spooned and leveled)
3/4 cup jam (any type)





NOTES 
-i used a combi of some jam,a few strawberry jelly candies and a creamy vanilla bean ,choco ganache (recipe below)
-i tipped in confectioners sugar instead of reg sugar coz i love a snappy crunch.
-i made various sizes from large to mini...


1)Whisk away the butter and sugar with vanilla essence(home-made really strong  till smooth and creamy,have written a post but yet to take pics of the bourbon vanilla)
2)Add in the egg and enjoy the mousiness of the mixture.
3)Tip in the flour.
4)Refrigerate for a few mins . Now i did this not coz the dough was unmanagable but coz my faithfull oven wasnt all fired up. . . 
And boy later i realized it does make a world of difference for sure. . . . .  

The fun heightens here coz its time to roll  balls , i did a zig with different sizes here:-) and begin the thumbalina  act, a first time for me and a few had a double thumbalina act. . . . Filled some with warmed up to liquify tangy jam and placed a strawberry candy in. . Got chosen coz its the only red i had. . . . . .and left a few to fill in later with the elicious honey choco ganache.  




DELICIOUS CREAMY HONEY VANILLA CHOCO GANACHE
ADAPTED FROM MARTHA STEWART TOO 
this is an absolutely delightfull ganache that not only sets in beautifully but has an absolutely shiny glossy finish.
I eyeballed the quantities with an equal amount of honey & cream(low fat) & added a combi of arriba milk choco callets,semi sweet choco callets & yeah nutella.
i didn strain the mixture as suggested coz i love the presence of vanilla beans right in....
and i didn add the butter(honestly it slipped my mind)


1) Combine1/3CUP honey & 1/3CUPcream, and vanilla seed OF A WHOLE VANILLA BEAN in a PYREZ/LUMINARC in the microwave to a simmer,stirring inbetween and cook, stirring until honey dissolves. Remove from heat, cover, and let stand for 20 minutes.
(i think the stand part is for the vanilla bean to infuse all the flavour to the ganache


2) Return cream mixture to a simmer. Pour cream mixture over 4 OUNCES chocolate, and let stand for 1 minute. Process until smooth. Add 1 ounce (2 tablespoons) unsalted butter, cut into pieces and softENED , and continue to process, scraping down sides occasionally, until butter is incorporated. Let cool slightly, and then use immediately.

  1. I LOVE thumbrint cookies and I want that ganache. Immediately. I'm not the biggest chocolate fan so this vanilla honey one sounds amazing.

    I can just see you dancing around to christmas music while making these. Great way to get in the holiday spirit!
