A VERY CHOCOLATEY CHOCO CHIP COOKIE

12 cookies for Christmas-looks like i will get there soon wont i?Thats if i begin with the Snickerdoodles(oh i love em..)

And jus a bit back,i read on Megans Blog, about this great cookie exchange which is so dang cute an idea and just the right COOKIE FEST for me to be a part off during this great cookie season.

Susan @ food blogga is holding the ANNUAL 3RD COOKIE EVENT, and i simply have all eager beaver to drool over all the other GORGEOUS COOKIES EVERYONE HAS BAKED IN and i do wanna complete my 12 cookies and hope i can before the 20th-so do hop by and join in the fun

OF late ,i read up a bit more than usual when choosin a cookie recipe i not so in for cakkey or chewy cookies as am for a crunchy snappy crispiness that crumbles and melts in ur mouth.....

Ok now i do know(or do i?)that a good choco chip cookie would be crisp(not my kinda crisp)on the edges and softer/chewier towards the centre-correct me if am wrong....

But not me,i love a large ,thick ,gooey with loads of choco chips, crunchy crumbly crispie cookie...

When i saw this recipe for NIGELLA LAWSON CHOCO CHIP COOKIE,i was all in and thumbs up....

Usually i like a white cookie base with loads of not v bitter choco callets but somehow this one had me and the pic showed it was a nice crumbly cookie like the one's that are packed so neately in all thos dang cute tins and boxes....

i did tweak it a wee bit and my weight of ingredients aint perfectly correct(dont have a digi scale remember), but yet this one truly lived up to its name....

Ok first the tweaks and then the review ok-fair enuf???hope so-ok first the melted chocolate to mix in dough -i had half of nutella and half dark choco chips@70% coco, worked well.

Secondly i always always use powdered sugar in place of white sugar coz it helps in the crunchiness-adds to it.

Thirdly i mixed milk ,white and dark choco chips and while on choco i have to share this though i really dont know how right or wrong i am....

After a long hunt ,im now finally using real chocolate for my baking ie CALLEBAUT CHOCO CALLETS.

At present i have three types-coverture chocolate callets in very dark @ 70% coco ,which is excellent for 'everything',that too coming from someone who doesnt fancy bitter chocolate-im more of a milk chocolate gurl.
So coz of that i picked a bag(thank u mom!)of ORIGINE ARRIBA MILK CHOCO CALLETS,which are absolutely eliciously creamy & i thought i would use 'em when choco chips are called for coz i wanna bite into milky sweet choco gooeyness.....

now this is where i was WRONG-no arriba is an excellent chocolate but u want ur chips in ur brownies and cookies to give u a gooey choco pocket every time have a biggy bite ,but for that ur best bet is COVERTURE CHOCOLATE,so now am adding with a bag of coverture milk choco callets...
This is what u need for a great ganache & to dip ur gorgeous truffles into...
And ofcourse i have a bag of my other fav-white choco callets....UPDATE-HAVE JUS GOT ANOTHEER 2 BAGS OF COVERTURE CHOCOLATE IN MILK & DARK@53%-THE MILK IS GORGEOUS........

Oooooo.......i'm in love....again

Now for the recipe and review right below and yeah the pics speak too.....
ADAPTED FROM NIGELLA LAWSON

1/2 CUP DARK(70%CHOCO CALLETS)& NUTELLA

1/2 CUP + 3TBH FLOUR(i skipped the coco powder)

1/2 TSP BICARBONATE OF SODA

3 TBH/ 40 GRAMS LIGHT BROWN SUGAR

2TBH / 25 GRAMS POWDERED SUGAR

1 TSP VANILLA EXTRACT

1/2 EGG COLD

1 1/2 CUP/175GRAMS CHOCO CHIPS

1)Microwave ur chocolate callets, let stand for a min and stir thru the melted gooey chocolate.
Add in the nutella if using(next time will try with full nutella)
2)CREAm the butter(soft) and sugar till smooth and creamy.
3)tip in the egg and vanilla and beat really well.
4)Add the flour & bicarb(sifted together though i rarely use my sifter from TCM)alongwith with choco chips or callets and mix well.
5)Now i wanted smaller cookies so scopped half a scoop on a lined cookie tray & baked in a pre-heated oven @ 180*c for almost 40 mins(THE ORIGINAL RECIPE SAYS 18MINS FOR LARGER COOKIES BUT MY OVEN ALWAYS TAKES LONGER+I TEND TO BAKE A LITTLE MORE FOR THE CRUNCHINESS=MORE THAN DOUBLE BAKING TIME)

FROSTY THE SNOWMAN......
FROST 'EM
-just add a some just boiled water to say around 3/4 cup of icing sugar
-give it a good stir and microwave for 30 seconds
-add some coco powder(hersheys)& here i added the corn syrup (though i never really have had or seen corn syrup)kinda consisitency liquid that floats in my tub of turkish hazlenut paste.
-stir well & microwave again for 30 secs
-now a good tbh of nutella alongwith a good stir
And now for the fun ,would love love love for some Christmas candy & sprinkles but well our markets arent very '12 cookies for christmas' friendly and am still awaiting a few of my goodies too...

  1. I think I have made Nigella's recipe but yours are so much prettier than mine. You must have fun decorating. It is the best part but I usually run out of time and have to go to work.

    I love your pictures.

  4. I've been wondering about that kind of chocolate.

I much prefer milk chocolate, too, so now I feel like maybe I could give it a go and NOT despise the result! ;)

  5. Your cookies are so festive and anything involving Nutella has my vote! I love that glittery netting. Makes me want to run to the fabric store! :)
Those toffee cookies you asked about, they are not cakey at all. They are crisp around the edges and a little chewy in the middle. Let me know if you make them. I would love to see yours!
Thanks for the shout out! I appreciate it! :)
Have a happy happy holiday! It's almost here! Just enough time for you to finish your beautiful cookies!
