CHEWY PINEAPPLE CHOCO CHIP COOKIES

WHAT DO I CALL THESE??ok NIGELLA'S CHOCO OATMEAL COOKIES OR
chewy pineapple chocochip walnut cookies!!!!
u tell me & i'' play right along.....Now this the very recipe was also chosen by the lovely MARIA ,the baking Goddess,in keeping alive this lovely group SWEET AND SIMPLE BAKES,originally founded by Rosie and Maria and we do all miss and pray for Rosie to be up on her feet and fit as a fiddle soon. 
So Maria handles our monthly bake now and so beautifully with gorgeus recipes every month to have us baking,the globe over,a single recipe ,every month.
Sounds fun doesnt it,oh yes it is and much more.....
I had to tweak this a bit coz of want of nuts and cranberries-jus aint available even with a importer here so had to tweek it.
Now i was supposed to make this cookie again on first of jan,with another tweak ie hazlenuts and raisins and a little adjusment to get 'em crunchy but simply couldn catch so this is my cookie that goes to the bake along for THESE GORGEOUS COOKIES that Maria chose this month.
So here's my cookie and am so waiting to see urs.


Now its too late to participate in 12 weeks of xmas cookies but its cool(though would love to have the logo on my blog-its so cute)coz i have IHCC,that chose a COOKIE EXCHANGE THIS WEEK


Natashya from the beautiful 'kitchen puppies',a wondeful blog left a comment on katie's blog(oh i love katie's blog),and mentioned about i heart cooking clubs,why hadn i bumped in here before-what a lovely way to introduce more of nigella into our homes ,my first ever celebrity chef that i loved!!!!!



She's absolutely fantastic & i know i dont have the books,not a single one but whats the world wide web for,i'm so sure i'll find in some recipes wont i?

Am so glad that its cookies this time round,am jus so into cookies right now & the festive season is perfect for jus that....

Can we resist a mug o hot chocolate with marshmellows & whipped cream with a big fat choco chip cookie-no absolutely not-i love 'em!!!!(all)

or jus cuddling in bed with a big fat baking book eating cookies or more like gorging on big fat cookies???
or a glass of hot vanilla or cinnamon flavoured milk with ur fav cookies.....oh there are many cookies galore & loads of fav options all u guys will be up with which would so love to hear.....

A question that set me ticking is what inspires u to cook or whats ur inspiration to-is it my love for goan portuguese cuisine as much as worldwide culture cuisine....yeah i love to read up more about im about to simmer in the pot when possible-ok so its my love for food is it?It cant end at that surely,i may not be an excellent or over the top cook ,but the passion runs in my viens-im proud to say that i inherited this lineage than any other inheritence,my great great grandparents on both sides ,as far as i know the family tree,were lovers of good food,be it their excellent cooking or relishing or what have u........and it was meant to be that i got in pulled& attracted to the kitchen before any other & i love being there...the excitement of being a teen was over shadowed by the excitement when i won a few prizes 4 cooking way before being a teen-its another story that in the category i won the first place there was only a single participant-me & where i won 2nd were jut a few participants but point is that i won(i consoled myself)...and i was all grins......happy and gay....and still am with blogoshere and meeting fantastic foodies ,virtually-a humbling expierience i cherish & love!!!!

Ah i love baking cookies & with all the overdose of cakes or its the festive season thats drawning me to cookies alright.

Now ,am a part of another wonderfull baking group,sweet & simple bakes & actually have been wanting to bake pineapple cookies coz i have a some tinned pineapple & yup for the variety too & wanted to incorporate it by tweaking that v recipe ,little knowing its nigella's recipe.

Well while looking around for a great pineaaple cookie-and found 3 excellent ones-i bumped into this gorgeous baking site---i heart cooking club----and boy there i was ,now ny direction steered a little differently coz what this group is about is cooking up or baking ,nigella's recipes...
So back to search & viola....found this recipe-(so will be baking this cookie twice with tweaks)

Cranberries ,dried or fresh,have eluded me despite me looking around for quite awhile & pineapple i thought would be a great replacement.
So what i did is make my own dried pineapple with the help from my trusted(by now)oven & replaced pecans(another elusion)with walnuts(though hazlenuts would be great too)& kept the amount of chocolate chips the same though i halved the recipe,not for any reason other than i'll get to bake soon again,coz these were gone before i knew it.....

dark choco glaze,milk callets ,choco strands & green sprinkles-gng all the way!!!
and yeah i mixed white with milk chocochips,simply coz i love to bite into a crunchy cookie & get a mouthfull of gooey chocolate....
1/2 ap flour
1/4 tsp baking powder
1/2 cup oats(i used quackers oats)
70 grams butter(salted so no extra salt needed)
1/4 cup brown sugar
1/4 cup superfine sugar
1/2 egg
1/2 tsp vanilla extract
1/4 cup dried pineapple
1/4 cup cashewnuts
1/4 cup white & milk choco chips

the area to the left with a lone sprinkle is actually a pineapple bit !!!
NOTES
- i took over half cup of tinned pineapple and place them in the oven as i begin preping things for the cookies-except butter that was already out-so had the oven warmed enough for the cookies too-took mins @180*c
- i dont need to use salt coz i use salted butter ,else tip in 1/4 tsp salt
- i added confectioners sugar instead of superfine mainly for 2 reasons-first confectioners sugar gives an added crunch that i love&
secondly i didn have supefine sugar ,which i can easily make with the grinder but then refer to reason 1.

a fav ,with the gooey milk choco & smalleys ,so quite a crunch there was to a chewy cookie!!!
1)MEasure out the flour,baking powder & oats in a bowl.
2)BEat butter & sugars in a bowl til light & creamy-i used my hands yeah to 'put in muscle'-it worked fine!
3)Now its vanilla & egg thats needs to be beaten into the mix!
4)Ok the flour mix now & beat it in.
Nows the turn of the gorgeous mix of the dried pineapple,Nuts,chocochips.
5)Set it in the fridge for a few mins.(i skipped this step coz wasnt too sticky too handle-jus a wee bit-and my oven was already all fired up,the pineapple remember-i wasnt up to waste too much gas)
ROll tablespoons of dough with ur hands & place 'em on a lined baking sheet & squish the dough balls with a fork!!-i did sprinkle brown sugar on a few!!!
6) I baked 'em for around 30 mins,switching trays inbetween-i love an added crunch but they being chewy cookies,had to re bake 'em later again coz i love crunchy not chewy cookies,for say another half an hour

I actually ended baking these cookies thrice...coz they werent as crunchy -after these are chewy not crunchy cookies & we arent high on chewy's -the flavours great and the smaller one's had a crunch too!!!(not ur crunchy kinda crunch but a chewy kinda crunch)
i loved the added chocolate instead of a pineapple glaze ,had thought of earlier & though i original had thought of walnuts(dont u think they resemble pecans atleast a bit),i changed to walnuts coz the pack we jus picked a few days ago were totally stale!!!

i dont have any of nigella's books but online are the very chocolatey chippy cookies & cutouts(already tried) & would love to try the birthday cookies too but cant-no recipe

update-i am first on mr'linky for this weeks cookie exchane-wasnt planned but am kinda hapi now-hehehehehe
bdw,these cookies are extremely high on flavour but a little low in texture coz we arent too fond of the chewy softy kind!!!!

Kim was asking about low cal cookies-i was wondering if this would work if u replaced the follw for some goodness of health
white sugar with an equivalent sugar free or stevia or something or organic natural sugar
butter with a healthier option
decrease the flour and replace with oatmeal or replace flour with whole wheat flour....the fruits and nuts are fine......
till i can post on kim's stirring the pot and mandys recipes for now(i get this feeling its my ntbook coz had probs with quite a few today)
